5 Dinner Ideas for Vanlife

Cooking in a campervan can be a fun and adventurous experience. Cooking while travelling in a van doesn’t have to be massively different to cooking in a house, but it’s essential to try and choose meals that are easier to prepare and that don’t take up too many pans. One pot meals are always appreciated by vanlifers. Here are five easy and delicious dinner recipes you can try on the road:

One-Pan Chicken and Vegetables:

Season chicken with your favorite spices and cook it in a skillet over medium heat until browned. Add chopped vegetables like bell peppers, onions, and zucchini, and sauté until tender. Serve hot.

Grilled Cheese Sandwiches:

Butter the bread slices and fill them with cheese slices. Grill in a skillet over medium heat until the bread is golden brown and the cheese is melted. Serve with tomato soup.

Pasta with Tomato Sauce:

Cook pasta according to package instructions. In a separate sauce pan, heat up canned tomato sauce with garlic and Italian seasoning. To take the meal to the next level, sauté onions, garlic, carrots, celery and mushrooms in oil before adding the sauce!  Mix the sauce with the pasta and top with grated Parmesan cheese.

Tacos:

Brown ground beef, turkey or black beans in a skillet with taco seasoning. Serve with tortillas, shredded cheese, lettuce, tomatoes, and your favorite toppings.

Veggie Stir-Fry:

Heat oil in a skillet and sauté chopped vegetables like broccoli, carrots, and bell peppers until tender. Add soy sauce, garlic, and ginger for flavor. Serve over rice or noodles.
